Roll, Over: Three Easier Ways to Get Your Carb Fix
Anyone else have a love-hate relationship with rolls? As in, love eating them, hate making them? Any food that involves hours spent waiting for a microscopic organism to do its thing is too stressful for me on a day that already involves roasting 25 pounds of fowl and--gulp--making gravy.
While I’m all for store-bought shortcuts now and then, I’ve found that rolls, whether from a chichi artisan bakery or in bulk from Costco, tend to be a little disappointing, especially on a day aimed at making every single calorie as delicious as possible. With that in mind, here are three ideas for your Thanksgiving bread basket--all of which don’t require worrying about murdering a packet of yeast.
Gougeres
These little French cheese puffs are like the fluffiest, lightest rolls you’ve ever had...stuffed with gruyere and parmesan. They double as an appetizer and freeze really well--just reheat at 350 for 5-10 minutes.

Buttermilk Biscuits
Here’s an easy trick for better biscuits: cut them into little squares with a knife, rather than using a circular biscuit cutter. The dough stays more tender because you handle it less. Serve with salted honey butter.
