What's For Dinner? 2.9.15

At the end of the week, my kids and I are heading on a road trip with my mom. Considering all that we need to get done before leaving, this week is going to be filled with more low-maintenance meals to make dinnertime a little less stressful. Simple and delicious; the perfect combination.

Spicy Kale and Coconut Stir Fry from Cookie + Kate
I need a little extra flavor when I'm not cooking with meat. This spicy recipe sounds like the perfect solution to start our week off right.

Lasagna Soup from Skinnytaste
My husband is a big fan of lasagna. I, on the other hand, don't love all of the work that goes into making it from scratch. This yummy soup is a great, easy compromise we can both enjoy.

Grilled and Chopped Chicken Caesar Salad from Food52
On cold, wintry days, cold salads can sound completely unappealing. But by grilling your greens, this fresh take on caesar is something that works year-round.

Meatball Pizza from Serious Eats
I'm having a craving for Grimaldi's, but since we don't have one nearby, I'll have to make my own version. This recipe looks like a pretty good copycat. I can't wait to give it a try.

Spice-Rubbed Pulled Pork
I can't get enough of these tacos! I'll make up a batch on Friday so that there are plenty of leftovers to tide my husband over while we're away. He can use the meat in salads or sandwiches too.

And for dessert...

Raspberry Mousse Tartlets from Love & Olive Oil
Just in time for Valentine's day, these cute and easy little desserts combine berries and chocolate. What could could be better?

Happy Monday!
