Monday: Whole Wheat Blueberry Muffins
We'll start with breakfast for dinner by making these yummy muffins with some scrambled eggs and orange juice. I may even mix in a little shaved ham and peppers into the eggs for extra oomph.
Tuesday: Roasted Tomato Soup from Veg Recipes of India
I can't wait to try this soup that claims plenty of flavor without using any dairy. I'll add grilled cheese in a fun way that always makes my kids happy - coming soon on the blog.
Wednesday: Brown Rice Paella
While a little less traditional, this one-pan dish is a classic in our house. And I'll have plenty of peppers left over from Monday night's eggs to use in this recipe.
Thursday: BBQ Comfort Meatballs by The Pioneer Woman
I'll confess - I love meatloaf. But I detest making it. Why? I'm always terrified of under-cooking the middle and poisoning my family. These meatballs are the perfect compromise for that yummy meatloaf taste in a quicker and less intimidating way. I'll pair these with my mock mashed potatoes made with cauliflower - recipe coming soon.
Friday: Chicken Pot Pie by Lovely Little Kitchen
I love that this recipe lets me cheat and use puff pastry rather than making my own crust from scratch. And what's more comforting than chicken pot pie? Friday can't come soon enough.
And for dessert...
Flourless Peanut Butter Cookies by Our Best Bites
My roommates and I used to make a version of these super simple cookies back in college as we'd watch Desperate Housewives. They're incredibly chewy and delicious. Luckily, the recipe yields a smaller batch than a classic cookie recipe because without flour or butter, you'll be tempted to eat every. last. one.

ReplyDeleteYou make the paella the same day and we can pretend to eat together. The mock mashed potatoes taste just like the real thing but way healthier. Matt may actually like them better!
