Happy President's Day! I hope you're lucky enough to be doing something more fun than grocery shopping today. But whenever you get around to menu planning this week, here are five ideas for weeknight dinners, along with one deliciously easy dessert.
Monday: Parsnip, Yam, and Watercress Chowder from Epicurious
I like recipes that taste like they use an absurd amount of cream but are actually healthy. My sister-in-law introduced me to this hearty soup, which is packed with vegetables, including greens, and only uses a quarter cup of cream, relying mostly on pureed parsnips for the creamy texture (you can actually forgo the cream completely, but why?). So comforting and yummy.
Tuesday: Spaghetti with Garlic, Almond, and Herb Crumbs from Cook Republic
Pasta is my favorite weeknight go-to. This version is full of flavor with very little effort. If you feel the need for protein, add some shredded chicken.
Wednesday: Citrus Salad with Shaved Fennel, Celery, and Cilantro-Yogurt Dressing from Food52
How beautiful does this look? I love finding salad recipes that take advantage of winter produce. I always serve bread or biscuits on salad nights, especially since these days Max only eats carbs or things flavored with fake orange cheese.
Thursday: Pork and Shrimp Dumplings
We'll celebrate Chinese New Year with homemade dumplings, which we can't seem to stop making lately. I'm planning on serving them with roasted snap peas (prepare to be addicted).
Friday: Baked Chilaquiles with Black Beans and Kale from Bojon Gourmet
Tortilla chips for dinner? Yes, please! A Mexican brunch classic earns a little nutritional merit with the addition of kale and black beans.
And for dessert...the easiest cake you'll ever make.

Chris is out of town this week, so I'm trying to entertain myself in the evenings. I've missed a few amazing posts on here--so fun to read through and catch up this week! As with anything, the food is what catches my eye first (it's a problem, I admit). That last recipe, the chocolate ice box cake? One of my favorite roommates gave me the recipe in college, and it is THE best dessert ever. I make it in a big bowl, like a trifle, and oh man alive, I could probably eat the entire thing myself. Chris loves bringing it to his work's "cake day" because it's super easy for me to whip up last minute and everyone loves it. So there's my ringing endorsement. :) (All the other food looks amazing, too!)
