It's still early enough in the year that I'm craving (sort of) healthy food. My planned dinners this week are heavy on the veggies without being too virtuous, and most can be whipped up in 30 minutes or less.
Monday: Chicken Tortilla Pie from Pinch of Yum
Perfect for Monday, especially with a nice pile of tortilla chips.
Tuesday: Orecchiette with Sausage and Broccoli from Dinner: A Love Story
Doesn't get much easier than this. I like to make this with spicy chicken sausage rather than sweet pork.
Wednesday: Brussels Sprouts and Tofu Stir-Fry from Bon Appetit
Have you tried gochujang? It's like sriracha's cooler cousin. I'll serve this with brown rice.
Thursday: Carrot Caraway Soup
My go-to weeknight soup. So yummy with these fluffy little biscuits.
Friday: Delicata Squash Galette from A Thousand Threads
On Friday nights, we put the boy to bed and enjoy a grown-up meal while catching up on the DVR. Can't wait.
Sunday: Chicken Skewers with Dukkah Crust from Smitten Kitchen
Blah chicken gets exciting with dukkah, an Egyptian spice and nut mix (available at TJ's!). I'm planning on serving these with couscous and an arugula salad.
